<p>The inaugural recipe is for some delicious, chewy cookies from Down Under. ANZAC stands for Australia-New Zealand-Air Corps. &#8220;Biscuits&#8221; stands for cookies. And you thought you wouldn&#8217;t learn anything from this blog. I&#8217;ve Americanized the ingredients so you don&#8217;t get confused by metric measures and things like &#8220;bicarbonate of soda&#8221; (aka baking soda). These are totally simple, first invented during WWII by housewives who needed a recipe without eggs for cookies that would keep for a long time.</p>
<p>They only call for one weird ingredient you probably don&#8217;t have on hand&#8211;Golden Syrup. I love that they call it that, like it&#8217;s something from Harry Potter. This recipe is simple to double, which you might want to do if you live with a cookie monster.</p>

<h2>Ingredients</h2>
<ul>
<li>1  cup  rolled oats (regular or quick cooking, or combine with oat bran and/or ground flax seed for extra nutrition)</li>
<li>1  cup  all-purpose flour</li>
<li>1  cup  packed brown sugar</li>
<li>1/2  cup  shredded sweetened coconut</li>
<li>1/2  teaspoon  baking soda</li>
<li>4 T butter, softened (use margarine if you must, or if your son-in-law is lactose intolerant)</li>
<li>3  tablespoons  water</li>
<li>2  tablespoons  golden syrup (I think in the South they call it cane syrup</li>
<li>1 tsp vanilla</li>
<li>optional additions: cinnamon,  almond extract, raisins (they call them Sultanas Down Undah), nuts, chocolate bits&#8230;</li>
<li>Parchment paper and cooking spray</li>

<p>Combine dry ingredients, then stir in water, butter and syrup; stir well. Add extra things to taste. Drop by level tablespoons, 2 inches apart, onto baking sheets covered with parchment paper and sprayed with cooking spray. <span style="color:#ff0000;"><strong>Do not try these without parchment paper. Parchment paper is your friend.</strong></span> Bake at 325° for 12 minutes or until almost set. <a href="http://susanwiggs.files.wordpress.com/2009/11/anzac-biscuits-016.jpg"><img class="alignright size-thumbnail wp-image-2744" title="parchment paper is your friend" src="http://susanwiggs.files.wordpress.com/2009/11/anzac-biscuits-016.jpg?w=150&#038;h=100" alt="parchment paper is your friend" width="150" height="100" /></a>Remove from oven; let stand 2 to 3 minutes or until firm. Remove cookies from baking sheets. Place on wire racks; let cool completely.If you&#8217;re an inquisitive dobie, you definitely want to check out the action. This is a technique Barkis calls counter-surfing.</p>

Last November, we had so much fun right here on <a href="http://gratitudeproject.posterous.com/www.susanwiggs.wordpress.com">my blog</a> listing things we&#8217;re grateful for that I&#8217;ve created a special web site for it.</p>
<p>Please join me again this year in <strong>the gratitude project</strong>. Expressing gratitude for things large and small is incredibly good for you. There&#8217;s probably a psychological study proving it, but you don&#8217;t need a study. If you do this simple exercise once a day, you&#8217;ll know it works, because you&#8217;ll feel better.</p>
<p>Every day from now until Thanksgiving, I&#8217;ll be posting things I&#8217;m grateful for at www.gratitudeproject.posterous.com. Some will be silly, some profound, but all will be honest and from the heart. I invite you to join me in this exercise. I&#8217;d love it if you&#8217;d post your list there too, because readers and writers never fail to inspire me. But you don&#8217;t have to. Keep your list private if you wish. The important thing is to specify something you&#8217;re grateful for, and write it down.  Or put it on your blog or share with a friend. Feel free to pass the suggestion along. I&#8221;d be eternally grateful.</p>
<p><strong>Instructions: Posting is ridiculously simple. All you need to do is send your gratitude in an e-mail to <a href="mailto:post@gratitudeproject.posterous.com">post@gratitudeproject.posterous.com</a>. <p><strong>Cookie Tiiiiime!</strong></p>
<p><em> </em></p>
<p><em>Lakeshore Christmas</em> features a collection of cookie recipes from favorite  fictional characters. Remember chewy molasses cookies? This is the one. I first  discovered it thanks to my friend Cheryl, who got it from the Silver Palate  Cookbook. I tweaked it here and there to make it unique for the book–that pinch  of cayenne is the secret:</p>
<p>Daisy Bellamy&#8217;s &#8220;May the Best Man Win&#8221; Molasses Cookies</p>
<p>&nbsp;</p>
<p>(24 cookies)</p>
<p>Ingredients</p>
<p>3/4 cup unsalted butter</p>
<p>1 cup sugar</p>
<p>1/4 cup molasses</p>
<p>1 egg</p>
<p>1-3/4 cups flour</p>
<p>1/2 teaspoon ground cloves</p>
<p>1/2 teaspoon ground ginger</p>
<p>1 teaspoon ground cinnamon</p>
<p>1/4 teaspoon cayenne pepper</p>
<p>1/2 teaspoon baking soda</p>
<p>&nbsp;</p>
<p>Directions</p>
<p>1. Preheat oven to 350°F.</p>
<p>2. Line cookie sheets with baking parchment.</p>
<p>3. Melt the butter; mix well with sugar and molasses.</p>
<p>4. Beat in the egg, then slowly add the rest of the ingredients, mixing well  to create a wet dough.</p>
<p>5. Line a cookie sheet with foil or parchment.</p>
<p>6. Drop the batter by scant teaspoons onto the parchment. Leave plenty of  space, because cookies will spread.</p>
<p>7. Bake 8-10 minutes, just until the cookies darken.</p>
<p>8. Remove parchment from cookie sheet, and let cool. These cookies are  delicious as is, or you can dress them up with a drizzle of lemon icing.</p>

<p>Manly men have monosyllabic names. <strong>It&#8217;s a Rule. </strong>Deal with it:</p>

<p>Here are some manly names you will never see in a Wiggs book, because I&#8217;m related to them so I can&#8217;t write about them as fictional characters (shudder): Nick, Jay, Jon, Dave&#8230;all good names, but too close to home to use.</p>
<p>The initial and final sounds of a male monosyllabic name are like muscular biceps framing a massive chest. I&#8217;m not kidding here. <strong>Pay attention, you might learn something.</strong></p>
<p>Okay, they can have ONE MORE syllable if you promise to give them<strong> really cool surnames:</strong></p>
<p>Ryan Calhoun. Jesse Morgan. Dylan Kennedy. Justin McCord.</p>
<p>If they&#8217;re really special and have a following <em>even though their book is not yet written,</em> they might get to have a totally special name:</p>
<p>Julian Gastineaux, anybody? Logan O&#8217;Donnell?</p>
<p>FYI &#8211; here are some move names you will NEVER find attached to the hero of a Wiggs book: Winston. Percy (even though it worked fine for the Scarlet Pimpernel). Vivian, Uriah, Seymour, Poindexter. To name a few.</p>
<p>Oh, and another thing. The name has to sound good next to their girlfriend&#8217;s. The female love interest in this one is <strong>Tess</strong> (short for Theresa) Lindberg. So I wouldn&#8217;t want Jess or Jesse. That&#8217;s just too cute.</p>
<p>His <em>surname</em> has to work with the girl&#8217;s name too, since she has to live with it the rest of her happily-ever-after life. So, Farraday. Someone mentioned that earlier. I&#8217;m thinking Quinn. <strong>Quinn Farraday.</strong> But maybe not, because Quinn + Tess looks a little suspicious, like someone just made them up out of think air. Lemme think on this.</p>
